Bake a Michaelmas Dragon Bread

Gather Your Supplies:

    Dragon bread ingredients:

    • 6 cups flour
    • 2 cups milk
    • 2 tsp + 1/3 cup sugar
    • 5 tsp dry yeast
    • 1/3 cup melted butter
    • 1 tsp salt
    • 1 egg yolk

    Bake Your Michaelmas Dragon Bread

    Step 1:  

    In a separate bowl, dissolve your 2 tsp of sugar in 2 cups of warm milk. Add your yeast and stir gently. Let sit for 5 minutes or until frothy. Stir in the melted butter then add the mixture to the flour and mix gently.

    Step 2: 

    Add in the remaining sugar, the salt, and stir together. If you’d like any additions (like raisins), add now and fold into the dough.

    Step 3: 

    Add in your egg yolk and gently begin to knead. Once the dough starts to form a ball, roll onto a slightly floured surface and begin to knead. Knead for about 5 minutes and place in a lightly greased (oil or butter) bowl and cover with a damp kitchen towel. Let rest for 1 hour in a warm place. 

    Step 4:  

    After resting, knead for 20 seconds and shape your dough on a baking sheet. Let rise for an additional 30 minutes. 

    Step 5:  

    Bake your bread at 375° F for 30-60 minutes depending on your loaf. It will be done when you tap gently on the underside of the bread and hear a hollow sound. Once you let the bread cool, cut a slice and enjoy your Michaelmas dragon bread!
